500 g Chicken Breast Fillets
3 T Olive Oil
1/2 tsp Sesame Oil
1 tsp toasted sesame seeds
2 green onions (thinly sliced)
6 Fresh cumquats, sliced into discs and deseeded (if in season).
Marinade
1 T soy sauce
Salt and pepper
Sauce
2 T hoisin sauce
1 T soy sauce
2 cloves garlic minced.
2 jars Spiced Cumquat Paste
1/4 cup water
1. Slice the chicken breast across the grain into 1 cm thick pieces.
2. Marinade with the soy and salt and pepper. Leave for 20 minutes.
3. Mix the sauce ingredients in a microwave save jug and warm gently in microwave. Stir until lumps disappear.
4. Heat up a pan, add olive oil. Place chicken pieces in a single layer in the pan. Fry for 3-4 minutes each side until golden brown and cooked through.
5. Add jug of sauce ingredients to pan and stir through chicken pieces. Heat until sauce reduces and coats the chicken.
Stir in sliced cumquats, turn off heat and add sesame oil.
6. Serve with rice and garnish with green onions and toasted sesame seeds.
